Ice Cream Pie - In Celebration of Our First Day of School

To make my children's first day of school special, I enjoy doing something that's "out-of-the-ordinary" for them.  This year it's the "baking" of an ice cream pie.  So in celebration of our first day of school, here is a simple, but very tasty, ice cream pie recipe. 


Oreo pie crust
Oreo cookies
Ice-cream (your choice of flavor)
Dark Chocolate Covered Cacao Nibs (or chocolate chips)


Fill the Oreo pie crust with ice cream.  (Make sure the ice cream sits out until softened.)

Spread the ice cream evenly. 

It should look like this.
Soften the cacao nibs by microwaving them in a bowl for about one minute.  (If using chocolate chips, melt them and then drizzle it over the ice cream.)

Sprinkle the cacao nibs onto the ice cream.

Crush a handful of Oreo cookies.

Sprinkle the crushed Oreo cookies over the ice cream.

Put the ice cream pie in the freezer for two hours or overnight.  Serve when the ice cream has reset.
