Salad Boxes

Yesterday I had a couple of my friends over for dinner and scrapbooking.  I always enjoy serving a salad with our dinner, but because you never know what people enjoy or don't enjoy in their salads, I like to allow my guests and family to choose their own vegetables.  Putting together these salad boxes is a great way to accomplish this.  This way everyone is free to choose which toppings they want on their salad.  

Another wonderful benefit of having these salad boxes is that it helps my family and I eat healthier.  On Sundays I bring out my food processor and chop, shred, and slice the vegetables.  Then I put them in these containers which I bought at Wal-mart.  I put them in the refrigerator and take them out for lunch and dinner.

Whenever my children are hungry for a snack, they can pull these out along with their favorite yogurt ranch dressing, or my homemade ranch dressing made from cashews, and eat a healthy snack.  When we're busy homeschooling, having these salad boxes helps us eat quickly and get back to our schooling.

You can fill these boxes with whatever vegetables you and your family enjoy.  The time it takes to make these depends on the vegetables you use and whether or not you use a food processor.  Using my food processor, it takes me about 45 minutes to an hour.
