Recipe: Slow Cooked Cheese Tortellini with Italian Sausage

One of my children's favorite meal is cheese tortellini with Italian sausage.  I love it because I can cook it in the crock pot on those days when I have limited time for cooking. This is one of the reasons I absolutely love crock pot meals!

Following is the recipe which serves 8:

2 pounds of Italian sausage (I use turkey Italian sausage.)
32 ounces pasta sauce (It works well with marinara sauce too.)
28 ounces diced tomatoes with Italian seasoning
2 packages (9 oz. size) of cheese tortellini (I use the frozen ones with natural ingredients.)

Cook sausage in a skillet until browned. Drain well and cut into round slices.  Place in a 6-8 quart slower cooker.  Add the pasta sauce and the can of tomatoes.  Stir well and cook on low for 5 hours.

Stir in frozen tortellini, cover, and continue to cook on low for 30 to 35 minutes before serving.
